WEDDING AND GROOM CAKES
Here are some basic guidelines and terminology I follow.
The BASIC CAKE we all know is a 9" round with 2 layers.
For a wedding cake, each 2 layer is sliced into 2 layers,
making 4 layers. This is a BASIC TIER consisting of 4 layers.
Tiers of different sizes can be stacked and make 2 tier,
3 tier, etc. Each tier adds $0.25 per slice. Difficulty of
decoration may add to the price.Rectangular cakes or
SHEET CAKES are usually made in 1/2 sheet size (12"x 18").
BASIC FLAVORS are French Vanilla, Golden Butter and Chocolate
Fudge. BASIC ICING AND FILLING is buttercream to match the cake.
French or Meringue Buttercream add $0.25 per slice. Special
shapes add $0.50 per slice. The top layer of a wedding cake is
usually saved for the first anniversary and is not figured into
the number of servings. A sales tax of 8.25% is added.
